PASTA WITH EGGPLANT IN TOMATO SAUCE
The ingredients are fit for two portions.
2 or 3 cups (wheat) pasta.
1 Spoon clarified butter or sesame oil.
1 Tea spoon grated ginger.
½ Tea spoon chopped chili pepper.
¼ Tea spoon bay leaf powder.
¼ Tea spoon caraway seeds.
¼ Tea spoon cumin powder.
¼ Tea spoon asafoetida powder.
1 Tea spoon paprika powder.
2 or 3 Tomatoes.
4 Cups water.
1 Spoon coriander leafs.
½ Tea spoon rock salt.
Chop the eggplant into cubes.
Cook the eggplant cubes in 2 cups of water until tender.
Cook the pasta in 2 cups of water until they become soft.
Blender the tomatoes.
Heat the clarified butter or sesame oil.
Add the bay leaf, caraway, cumin, asafoetida and paprika.
Add the blendered tomatoes.
Cook until the sauce is done.
Put the tender eggplant cubes into the sauce.
Add the coriander leafs and rock salt.
Put for serving the pasta on a plate and put the tomato sauce with eggplant cubes over it.
