White Beans and Spinach in Tomato Sauce

This recipe goes well with for instance plain rice, bread or mashed potatoes.


The ingredients are fit for about two portions.

  • 1 Cup white beans.
  • 200 Gram spinach.
  • 2 Tomatoes.
  • 2 Spoons ghī or sesame oil.
  • 1 Teaspoon grated ginger.
  • ½ Teaspoon dried sage.
  • ½ Teaspoon paprika powder.
  • 1 Teaspoon tomato powder.
  • ¼ Teaspoon black pepper powder.
  • 1 Spoon lemon juice.
  • ¾ Teaspoon salt.


  • Soak the beans for about 12 hours and drain them.
  • Cook the beans in fresh water until done. Drain them and keep them on a very low flame warm without burning.
  • Blend the tomatoes until smooth and cut the spinach.
  • Heat the ghī or sesame oil.
  • Add the ginger, sage and paprika and fry them for a few seconds.
  • Add the tomatoes, tomato powder and black pepper powder and cook untill the sauce is done.
  • Add the spinach and beans and cook a few moments untill the spinach is just done.
  • Put the heat low and add the lemon juice and the salt.
